Enjoy a slice of Ballarat this August with the return of Ballarat’s Best Pie competition.

Take your pick from more than 35 savoury and sweet pies at some of the city’s top cafes, restaurants and bakeries.

On the menu at Mondegreen Cafe is the apple sty pie.

This warm apple pie is laced with maple in a bacon fat shortcrust pastry, topped with maple candied bacon and served with a creamy maple bacon ice cream.

Chefs Kris Payne and Peter Dawson have been working together for over seven years and have a shared love for recipe development.

With a mutual love for desserts and home-style baking, they were naturally drawn to the classic apple pie.

But, true to form, they wanted to take it a step further– elevating a familiar favourite by layering in bold, unexpected flavours.

"The combination of tart apples, rich maple syrup and salty, smoky bacon struck the perfect balance of sweet, savoury and indulgent," Kris and Peter said.
