A swathe of Ballarat’s favourite venues have created memorable ice cream sundaes slathered in some truly imaginative and unique toppings just for this summer only.
These family-friendly sweet treats range from the simply delicious to the seriously luxurious.

Eton Mess sundae
Canberra Hotel and The Stables Tea Room, 812 Macarthur Street, Ballarat (reopening 20 January)
A new take on an old dessert served amongst the roses and lavender in the cottage gardens of the Canberra Hotel and The Stables Tea Room. This Eton Mess sundae sees Aunt Margaret’s crushed meringue topped with vanilla ice cream, summer berries from the kitchen garden, fresh whipped cream and drizzled with berry compote plus raspberry and passionfruit coulis and served in a classic cut glass bowl.
It’s Been A Rocky Road
Vegas & Rose's little pink door in Brown Hill (reopens 30 January)
Down a leafy wide street in Brown Hill is an old weatherboard house with delicious treats hidden behind a pink door. This is the home of Vegas & Rose, where you can pick up a Chai Latte Milkshake and a sundae called It’s Been a Rocky Road. It’s made with two scoops of Timboon Ice Cream topped with turkish delight, vanilla bean and Vegas & Rose's own house-made rocky road brownie smothered with chocolate fudge sauce.
The George’s summer sundae
The George Hotel, 27 Lydiard Street North, Ballarat
The George Hotel is a majestic historical building with three storeys of balconies finished with iron lacework. It was here in 1854 that troops gathered to plan the attack on the siege of Eureka. Go to plan your own attack on The George’s summer sundae made with scoops of vanilla bean ice cream, crunchy meringues with raspberry and pistachio and finished with a flourish of persian fairy floss.
Sticky date sundae
Flying Horse Entertainment Venue, corner of Bell and Pleasant streets, Redan
Delicious ice cream topped with pieces of sticky date, butterscotch sauce, blueberries, strawberries, chocolate wafers and toffee popcorn. The Flying Horse is also running its 'kids eat free' promotion with any adult meal purchased throughout the school holidays (T&C's apply).
The Gold Digger

Strike gold with a chocolate-dipped gingerbread vanilla ice cream sandwich sprinkled in your choice of raspberry drop, fairy drop or humbug crumb.
